In this series, we unveil the secrets behind our recipes, empowering you to recreate the authentic flavours of Miss Mi in the comfort of your own kitchen.
Come, cook with Mi!
10 egg yolks
1 can condensed milk
1 can evaporated milk
1 tsp vanilla essence
In a mixer, combine egg yolks, condensed milk, evaporated milk and vanilla essence. Strain to remove eggs that may not have been properly combined as well as to make the custard smooth.
Put sugar in a Llanera (Leche Flan moulder). In an open medium-sized flame, heat until the sugar melts completely and golden brown in colour (caramel). Cool down and set aside. Pour the flan mixture (custard). Cover the top of the mould with aluminum foil. Steam for 30-35 minutes. After steaming, remove the foil and cool down. Refrigerate overnight. Remove from Llanera by running a knife or offset spatula around the edge to loosen the flan then invert onto the plate.
