To start your Christmas celebration, each guest will be welcomed with a specially crafted Christmas cocktail. Then, get ready to indulge in a three-course Christmas feast that celebrates bold Southeast Asian inspiration and Chef Migo Razon’s own cherished memories of Christmas in the Philippines.
Enjoy three festive entrees including Smoked Rainbow Trout Salad with green mango and calamansi. Then the main course and sides take centre stage, with classic Filipino Whole Roasted Lechon Belly and baby Humpty Doo Barramundi wrapped in banana leaf, layered with coconut, crab fat, lemongrass and shrimp paste. Finish with not one but two desserts, including rich Bibingka Cake and refreshing Mango Float.
